Savory Steamed Egg Custard Recipe

On those nights when one is pressed for time, the savory steamed egg custard along with a bowl of rice or a couple slices of bread bread will make for a quick and tasty meal.  Try it in place of your usual stew or soup or as a side dish. The best thing about this savory steamed egg custard recipe is that it requires very few ingredients and only 5 minutes of hands on time.

This is all you need: 3 eggs, salt, some scallions(optional) and a strainer (optional).

Chop a tablespoon worth of scallions.

Crack 3 eggs into a mixing bowl and add ¾ teaspoon of salt. Scramble well.

Add 1 and ½ cups of water. If you have chicken broth, use that instead as it makes it more flavorful. Scramble again.

Pour the egg and water mixture through a strainer and into a dish that is safe to steam in. This is to remove all the air bubbles to ensure a smooth consistency.

Stainless Steel Steamer

Fill the steamer with water turn the heat on to high and wait for the water to boil. As soon as the water boils, turn the heat down to the lowest possible setting on your stove and put the dish containing the egg mixture into the pot. Remember to protect your hands!

Steam on low heat for approximately 35-40 minutes. I use low heat to guarantee a smooth custard like texture. If you are on a time crunch, or prefer a rougher texture, steam on high heat for 12-15 minutes. Note: The egg mixture will turn to a lighter shade of yellow after steaming.

Remove carefully from the hot steamer. Remember to wear hand protection! Sprinkle the chopped scallions on top. Enjoy!

Optional: Add some sesame oil or a dash of soy sauce for more flavor. I normally do not and even omit the scallions if I do not have any at home.

Hands on Time: 5 minutes
Cooking Time: 12-40 minutes depending on how you like the consistency of the eggs. Less time for a rough custard on high heat, and max time for a smooth consistency on low heat.


-3 eggs
-1 tablespoon of thinly chopped scallions
-3/4 teaspoon salt
-1 and ½ cups water or chicken broth for more flavor


(1) In a mixing bowl, scramble eggs and salt together. Add in water. Scramble some more.

(2) Pour mixture through a strainer into a deep plate suitable for steaming.

(3) Once the water boils in the steamer, turn the heat on low and place the mixture into the steaming rack. Steam for 20-25 minutes.

(4) Remove, sprinkle scallions on top and serve.


A Scrumptious Crab Meat Deviled Eggs Recipe

This is an easy peasy dish with an impressive sounding name. This is personal recipe of mine that I have tweaked over the years. I often bring it to potlucks because it is simple to make and a crowd pleaser to boot.

Crab Meat Deviled Eggs Recipe

Yields: 24 servings, Hands on Time: 30 minutes, Refrigerator Time: 1 Hour


-12 hardboiled eggs
-6 ounces crabmeat (Phillips lump crabmeat preferred)
-1/2 cup mayonnaise
-1 tablespoon Dijon mustard (Grey Poupon preferred)
-2 tablespoons freshly minced parsley as garnish
-1 teaspoon sugar (more if you have a sweet tooth)
-2 tablespoons finely chopped celery (optional)

(1) Cut eggs in half lengthwise. Separate the yolks from the whites. Only half of the egg yolks will be used. Save or discard the unused portion.

(2) In a bowl, mash the yolks with a fork into powder form and add sugar.

(3) Stir in the mayonnaise and mustard.

(4) Add in the crabmeat and chopped celery. Mix well with fork.

(5) Refrigerate for 1 hour to let all the flavors come together.

(6) Spoon into the egg white halves and sprinkle with parsley.
